What cuisine do you specialise in and what is unique about this cuisine?
I work with both Continental and South Indian cuisines. The latter is my favourite of the two because it scores very high on the health factor.
How long have you been a chef and what is your favourite thing about the job?
I am been in this industry for about 34 years now and I feel this career, though stressful, is extremely satisfying. The look of contentment on a guest’s face when he is really enjoying the food that I made is what really motivates me.
What is the best meal you have ever had and where did you have it?
The Oriental Chicken at Radha Regent’s Chinese restaurant, Oriental Blossom, is by far the best meal I have ever had. Its flavours just linger on.
What’s your take on the food scene in Chennai?
The F&B industry in the city is rapidly evolving. Rare and eclectic ingredients from abroad are now easily available, foreign cuisines and eating habits have a heavy influence on us these days and more and more people, especially from the middle classes, are now willing to go out, eat and experiment. I think that is a great improvement.
What is your favourite comfort food?
Home food, hands down.
Please describe an unforgettable incident from your career.
Earlier when I used to work at Apollo Sindoori, I had the opportunity to meet and interact with K.R.Narayanan and former Prime Minister, Chandrashekar and many other important political figures. These remain etched in my memory.

Cake Mixing Ceremony at Radha Regent
As the warmth of Christmas is beginning to spread in the air, at Radha Regent, the fun has already begun with the cake mixing ceremony. Radha Regent, one of the top Hotels in Chennai, was recently in the preparation to present the stupendous Christmas cakes this year.
The internal event to mark the starting of the celebration was made rich when employees from all the departments joined hands to blend the ingredients heaped up. A variety of dry fruits and rich nuts were mixed with a generous splash of wine, vodka, rum and various other secret ingredients to give the perfect flavour to the luscious Christmas cake.
